Buffalo Chicken Tacos

This recipe is an interesting twist on the traditional chicken taco. For those of you, like myself, who love buffalo wings, this is the recipe for you!
It's super simple and quick, so let's jump in!

Ingredients-
- 2 cooked chicken breasts
- 1 bottle of Franks Red Hot Sauce
- 2 tbsp butter
- Queso Fresco
- White Corn Tortillas
- Ranch Dressing
- Cilantro
Process-
1. In a medium size frying pan, heat 2 tbsp of butter over medium heat.
2. Cut your chicken breast in to cubes, rinse the cutting board and keep it out! (You may prefer to shred your chicken and that is fine too, I like cubing it since it is faster!)
3. Once the butter is melted, toss your cubed/shredded chicken into the pan.
4. Pour about 1/2 (or an amount to your liking) of Franks Red Hot Sauce over the chicken and in the pan.
5. Let the mixture simmer on medium/low heat while preparing the other ingredients.
6. Remove the queso fresco from packaging and cut in to small pieces, enough to fill as many tacos as you are preparing.
7. On another burner, on low heat, place one tortilla at a time and flip it after a few seconds. Repeat for all tortillas (time will vary by how hot you want your tortilla to get).
8. Stir the chicken and ensure that all sides are covered in the sauce.
9. After having heated your tortillas, run a line of ranch dressing through each of them at the bottom. Top this with 4-5 pieces of chicken (depending on how big they are), cheese and cilantro.
10. Enjoy!
Some substitutions you can make-
- If you aren't a fan of queso fresco and there is another cheese you would prefer more, then by all means make the switch!
- I like to use the street corn tortillas because they are small and I can eat more of them. Though, if you would like bigger tortillas or even flour tortillas more, then you are welcome to try this out with them instead!

Tips and Tricks-
If you're unsure of what kind of chicken to use, know that you have some options.
- Say you want to go the rotisserie chicken route, then make sure to remove the skin before using.
- If you buy raw chicken breasts, then just make sure to cook them in light seasoning (since we are making buffalo chicken) until their internal temperature reaches 165 degrees Fahrenheit.
- If you purchase frozen chicken (which is my least favorite of the options) make sure that the breasts are fully thawed before you begin cooking them and as with the raw breasts, make sure they are cooked all the way through.
